Savoury cheese and courgette muffins

Ingredients

  • 225g self-raising flour

  • 1tsp baking powder

  • Half a courgette – grated 

  • 75g cheese - grated

  • 175ml full fat milk

  • 1 egg - beaten 

  • 75ml olive oil 

  • 1tbsp rosemary



Method

  1. Preheat the oven to 180C/350F/Gas 4. 

  2. Place 6 muffin cases in a greased muffin tin

  3. Weigh the flour into a bowl, add the baking powder, grate in half a courgette and 50g of the cheese. Mix them together. 

  4. In a separate bowl add the milk, egg and olive oil. Whisk together until well combined. 

  5. Add the liquid mixture and rosemary to the dry ingredients and mix until well combined. 

  6. Divide the mixture among the 6 muffin cases then sprinkle over the remaining cheese. 

  7. Place in the oven and bake for 10-20 minutes until risen and golden brown
